Recently I made these super delicious Vegan. Chia Seed. Starfruit. Dragonfruit. Coconut. Popsicles! And they were delicious! My three Year old son loves popsicles more than anything, and instead of relying on processed store bought (and expensive!) popsicles we started making our own. In fact, these are so healthy, they can be eaten for breakfast and is a fun activity for you and your child to do together!
1/2 dragon fruit (get the white ones, because the pink tends to stain, which isn’t fun when they are melting)
1/2 star fruit, cut in thin slices (these are soo good frozen) Put in starfruit (you can add a little coconut milk first to get them to stick to the sides, kids loves the star shapes and you can see them better this way).
fill 3/4 of the way with coconut milk, then add chia seeds and stir a little bit. 1 tablespoon Chia Seeds for each popsicle is enough. I suggest putting this in after you stick the starfruit to the sides otherwise it gets in the way and messes up the cute star shapes that come out.
Top with dragonfruit: now this is a little more dense, so it makes a great tip or base of popsicle.
let freeze 3-5 hours
*Tip: make them before a long nap time or bed, so when they wake they will be ready to eat!
